Manufacturing process

Casalinga has become well known for the manufacturing of smallgoods, including cabanas, kransky, salami and various smoked meat cuts. The ovens at Casalinga are cooking around the clock with the range and demand for this type of product continuing to grow – particularly our award-winning Christmas ham and bacon. All Casalinga smallgoods are dry cured and naturally processed using native and citrus based Tasmania timbers, with no artificial smoke flavours or preservatives being used.

In expanding the product range, Rob has worked directly with ingredient labs, to create a unique Casalinga emulsifying meal. This ingredient, among many others, is then used in the manufacturing process of smallgoods and sausages. By having full control over these recipes and direct influence of their composition he has been able to minimise the use of preservatives, nitrites and other additives to the very lowest ratios possible.

It is important that the food produced in Tasmania’s primary production and processing sectors is safe to eat and ensures the wellbeing of our customers. This is also a key player in the protection of Tasmania’s premium brand as a producer of safe and clean food. Casalinga adheres to all food safety regulations and participates in regular lab testing with appropriate regulators. Being fully HACCP certified, Casalinga is proud to manufacture products for highly acclaimed Tasmanian producers.
